The millennial wine history of the Puglia region in general, and of the production area of ​​Salento, in particular, from the landing of the Greeks to the present day, passing through the medieval era, attested by numerous documents and historical artifacts, such as the discovery of amphorae winemaking following archaeological excavations, is irrefutable proof of the close connection and interaction existing between human / environmental factors and the quality and peculiar characteristics of the “Salento” wine, be it white, red or rosé.
This testifies how the intervention of man in the territory in question has, over the centuries and, especially in recent decades, first handed down, then developed, the traditional techniques of cultivation of the vine and enological, which in modern times have been improved and refined, thanks to the undisputed scientific and technological progress, to obtain the current award-winning wines

Territory

The geographical area dedicated to the production of IGT Salento wine extends over the hills located between the Ionian Arch and the Salento peninsula, in an area that is adequately ventilated, bright and conducive to carrying out all the vegetative-productive functions of the vineyards.
The Production Area of ​​IGT Salento Wine is located in:
Puglia region and includes the entire territory of the provinces of Brindisi, Lecce and Taranto.

Vinification and Aging

During the vinification phases, only loyal and constant oenological practices of the area are allowed, suitable to give the wines their particular quality characteristics.
The oenological winemaking practices of IGT Salento wine include, among other things, that:
– The maximum yield of grapes in IGT Salento wine must not exceed 80% and 50% for the type of passito wine and overripe grapes.
