Calcareous soil of marine origin with alluvial tracts of silica and clay. The climate is temperate of a sub-continental type, with mild winters, without frequent late frosts and breezy summers. The rainfall is scarce 800-1100 mm per year, with a slight accentuation in autumn. In dry summers, emergency irrigation is provided.

Vinification and Aging:

The grape harvest is both manual and mechanical. The pressing is soft and the fermentation, without maceration, takes place at a controlled temperature below 20° C and in the presence of selected yeasts.
Preparation of the blend of wine, must and organic yeasts selected to have a second fermentation in autoclave with the Martinotti / Charmat method that enhances, thanks to the presence of the must, the fragrance and freshness typical of the grape. The second fermentation is guided by automatic temperature control to obtain a slow and regular re-fermentation for at least 30 days. In this way, in addition to the olfactory fragrance, a thin, persistent and very pleasant foam is obtained in the mouth.
Storage in steel tanks at a controlled temperature (below 20° C) trying to protect the wine with nitrogen to avoid the oxidative effect of the air.
