The production area of ​​the denomination covers the entire foothills of the province of Verona extending from Lake Garda to almost the border with the province of Vicenza. Thanks to the protection of the Lessini mountain range to the north, the proximity of Lake Garda and the southern exposure of the hilly terrain and the valley floor, the climate in which the “Valpolicella” vineyard grows is overall mild and not too rainy, especially approaching in the low hills and in the valley bottom to the “Mediterranean” one. The rainfall does not exceed only during the winter and the annual average oscillates between 850 and 1000 mm. The soils of Valpolicella consist both of the disintegration of calcareous-dolomitic formations, and of basalts and moraine and fluvial deposits of volcanic origin which determine a different water supply to the vine in the various stages of development and growth of the foliar apparatus and during the of grape ripening. The “Valpolicella” vineyard lands have diversified exposures depending on the altitude at which they grow, which can reach up to 500 meters above sea level, and on the basis of the hilly slopes they occupy.

Vinification and Aging:

The grape harvest is manual, the pressing is soft and the fermentation takes place with a maceration of 6-8 days, to obtain the right coloring intensity. Selected yeasts are used and fermentation takes place at a controlled temperature, below 25 ° C.
Storage takes place in steel tanks at a controlled temperature below 20 ° C, protecting the wine with nitrogen to avoid the oxidative effect of the air. Stabilization and bottling take place cold using an isobaric filler.

The first cultivations of “Vitis vinifera” are attributed to the Paleoveneta or Etruscan-Rhaetian civilization which flourished between the 7th and 5th centuries BC. and which persisted during the Roman domination in Valpolicella, in the «Pagus Arusnatium». The first wine that was produced in the area, which today is the “Valpolicella”, was known as “retico”, because it was produced in the hilly and mountainous area of ​​the Veronese-Roman province, called “Retia”.
Among the hypotheses on the origin of the name “Valpolicella”, it seems that it may derive from the Latin “Polesella” which means land of many fruits or from “Vallis-polis-cellae” that is a valley of many cellars. There are also many citations of the winemaking activity in Valpolicella by the Greek-Roman classics, testifying to the viticultural importance of the area.
In the following centuries, viticulture in Valpolicella has grown a lot and has begun to specialize as evidenced by the first ampelographic cataloging of the nineteenth century, which formalizes, among other things, “the corvina” as a typical cultivar of Valpolicella. There are numerous scholars who dedicated lectures and writings to the vines of Valpolicella; in 1881 Stefano de ‘Stefani took care of the first delimitation of the production areas of Verona wines in which the “Wines of Valpolicella” were mentioned; this definition of the area and the improvement of production and winemaking techniques in the following eighty years led in 1968 to the official approval of the first “Valpolicella” wine production specification.
The DOC Valpolicella wine obtained the recognition of the Controlled Designation of Origin on 21 August 1968.

The Rondinella black berried grape is grown in the Lombardy and Veneto regions .
Rondinella is a vine of unknown origins, but it is believed that it is native to the Veronese area. The first documents that mention it date back to 1882. It is considered the easiest and most widespread grape variety in Valpolicella, both for its regular production and for its great resistance to disease and good predisposition to withering.
Rondinella is considered the best grape variety for the production of Recioto wine, thanks to its ability to accumulate sugars. It probably owes its name to the intense dark color of the berry, similar to the black plumage of swallows.

Wine Characteristics

From the Rondinella grape vinified in purity (which is very rare) an intense ruby ​​red wine is obtained, delicately fruity on the nose, medium-bodied, good acidity, and not very tannic, sapid and harmonious.
